What is Olio Nuovo?

"New Oil" — the most anticipated event in the olive oil world

If you've never tasted Olio Nuovo, you're in for something that will permanently change the way you think about olive oil.

Olio Nuovo — Italian for "new oil" — is extra virgin olive oil in its freshest, most vibrant form. It is the first pressing of the season, bottled and shipped immediately after harvest without any filtration, settling, or aging. Think of it the way wine lovers think about Beaujolais Nouveau — a seasonal, limited release that captures a single moment in time and disappears just as quickly as it arrived.

Most olive oil sitting on grocery store shelves was pressed anywhere from one to two years ago, shipped slowly by sea, and has been sitting in warehouses and on shelves ever since. By the time it reaches your kitchen, much of what makes great olive oil great — the polyphenols, the antioxidants, the aroma, the flavor — has already begun to fade.

Olio Nuovo is the opposite of that. It is olive oil the way it was meant to be experienced — alive, intensely aromatic, and bursting with flavor straight from the press.


What Does It Taste Like?

Olio Nuovo is unlike any olive oil most people have tried. Expect:

  • Deep green-gold color with a natural cloudiness from the fresh olive particles still suspended in the oil
  • Bold, grassy aromatics — fresh-cut herbs, artichoke, and the unmistakable scent of newly crushed olives
  • A silky, buttery texture that coats the palate beautifully
  • A distinct peppery finish — that catch in the back of the throat is a sign of high polyphenol content and exceptional quality

Why is it So Rare?

Olio Nuovo is only available once a year, for a very short window following the harvest in late October and early November. The olives must be picked at peak ripeness — not too early, not too late — and pressed within hours. There is no second chance, no second harvest. Once the season's supply is gone, it's gone until the following year.

How Should I Use It?

Olio Nuovo shines brightest in simple applications where its flavor can take center stage:

  • Poured over burrata, fresh mozzarella, or ricotta
  • Used as a dipping oil with good bread and sea salt
  • Drizzled over grilled fish, roasted vegetables, or a simple salad
  • Spooned directly over a perfectly cooked steak or lamb
